Shukto

Shukto is a traditional Bengali dish that is mix of vegetables cooked in a light spiced bitter gravy. It's known for its unique blend of flavors and is often served as a stater in Bengali cuisine.

Here's a recipe for homemade Shukto: Ingredients: - Bitter gourd (karela), Raw banana, Eggplant (Brinjal), Drumsticks, Potatos, Green beans (optional), Radish (optional), Mustard seeds, Poppy seeds, Ginger, Turmeric powder, Salt as per teste, Mustard Oil.

Instructions:

1. Peel and chop all the vegetables into small pieces.

2. Heat mustard oil in a pan. Add mustard seeds and let them splutter.

3. Add the chopped vegetables to the pan and saure them for a few minutes.

4. Grind together mustard seeds, poppy seeds, and ginger to make a smooth paste.

5. Add water to cover the vegetables and let it simmer until the vegetables are cooked but still firm.

6. Once the vegetables are cooked, add a pinch of sugar to balance the bitterness.

7. Serve hot with steamed rice
