Here's a simple recipe for Chingri Malaikari:

Ingredients:

- 500g prawns (cleaned and deveined), 1 cup coconut milk, 1 onion (finely chopped), 2 tomatoes (chopped), 2-3 green chilies (slit), 1 tablespoon ginger-garlic paste, 1 teaspoon turmeric powder, 1 teaspoon cumin powder, 1 teaspoon red chili powder, 1 teaspoon sugar, Salt to taste, 2 tablespoons oil, Fresh coriander leaves for garnish

Instructions:

1. Heat oil in a pan and add chopped onions. Saute until golden brown.

2. Add ginger-garlic paste and saute for a minute.

3. Add chopped tomatoes and cook until they turn soft and mushy.

4. Now add turmeric powder, cumin powder, red chili powder, and salt. Mix well and cook for another minute.

5. Add the cleaned prawns to the pan and cook until they turn pink and are almost cooked through.

6. Pour in the coconut milk and mix well. Let it simmer for a few minutes.

7. Adjust the seasoning and add sugar to balance the flavors.

8. Once the prawns are cooked through and the gravy thickens slightly, remove from heat.

9. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
