Here's a traditional Bengali Mutton Curry recipe:
Ingredients:
- 500 grams mutton, cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 2-3 green chilies, slit
- 2-3 tablespoons mustard oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon ginger-garlic paste
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- Salt, to taste
- Fresh coriander leaves for garnish
Instructions:
1. Heat mustard oil in a pressure cooker or a heavy-bottomed pan.
2. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until golden brown.
4. Add ginger-garlic paste and green chilies. Sauté for a few minutes until the raw smell disappears.
5. Add turmeric powder, coriander powder, cumin powder, and red chili powder. Stir well to combine.
6. Add chopped tomatoes and cook until they turn mushy and oil starts to separate from the masala.
7. Add the mutton pieces to the masala and sauté for a few minutes until they are well coated with the spices.
8. Add water to cover the mutton pieces, season with salt, and mix well.
9. Close the pressure cooker lid and cook for about 4-5 whistles on medium heat, or until the mutton is tender and cooked through. If using a heavy-bottomed pan, cover and cook on low heat until the mutton is tender, stirring occasionally and adding water if necessary.
10. Once the mutton is cooked, check the seasoning and adjust if needed.
11. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
