Here's a recipe for Koraisutir Kachori, a delicious Bengali snack made with peas filling:

For the dough:

- 2 cups all-purpose flour (maida)

- 2 tablespoons ghee or oil

- Water, as needed

- Salt, to taste

For the filling:

- 1 cup fresh green peas (koraisuti)

- 2-3 green chilies, finely chopped

- 1 teaspoon ginger, grated

- 1 teaspoon cumin seeds

- 1 teaspoon garam masala

- 1/2 teaspoon turmeric powder

- 1 tablespoon oil

- Salt, to taste

Instructions:

1. Start by preparing the dough. In a large mixing bowl, combine the all-purpose flour, ghee or oil, and salt. Mix well until the flour resembles breadcrumbs.

2. Gradually add water and knead to form a smooth, firm dough. Cover the dough and let it rest for about 15-20 minutes.

3. Meanwhile, prepare the filling. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

4. Add the grated ginger, chopped green chilies, and sauté for a minute.

5. Add the fresh green peas, turmeric powder, garam masala, and salt. Cook until the peas are soft and mashed. Mash the peas slightly with the back of a spoon while cooking.

6. Once the filling is ready, remove it from heat and let it cool down.

7. After the dough has rested, divide it into small equal-sized balls.

8. Take one ball of dough and roll it out into a small circle on a lightly floured surface.

9. Place a spoonful of the cooled pea filling in the center of the rolled-out dough circle.

10. Gather the edges of the dough circle and pinch them together to enclose the filling completely, forming a stuffed ball.

11. Flatten the stuffed ball with your hands and roll it out again into a flat disc, being careful not to let the filling come out.

12. Heat oil in a deep frying pan or kadhai over medium heat. Once the oil is hot, gently slide the rolled-out kachori into the oil.

13. Fry the kachori until golden brown and crispy on both sides, flipping as needed. Make sure to fry on medium heat to ensure the kachori cooks evenly.

14. Once fried, remove the kachori from the oil and drain on paper towels to remove excess oil.

15. Serve the Koraisutir Kachori hot with your favorite chutney or sauce.
