Here is a Simple and delicious recipe for Alu Posto - Ingredients :- 3-4 medium sized potatoes, peeled and cubed, 3 tablespoons posto (poppy seeds/ khus khus), 2-3 green chilies (chopped), 1 teaspoon mustard oil, 1/2 teaspoon kalo jeera (nigella seeds/kalonji), 1/2 teaspoon halud (turmeric powder, salt to teste, sugar to teste (optional).
Instruction :-
Dry roast the posto (Poppy seeds) in a pan over low heat until they turn aromatic. Be careful not to burn them. Once roasted, let them cool down.
Grind the roasted posto (Poppy seeds) alomg with the chopped green chilies into a fine paste using a little water. Set aside
Heat mustard oil ina pan over medium flame. Add kalo jeera and let them spultter.
Add the cubed chopped potatoes to the pan and saute for a few minutes.
Add holud (Turmaric powder) and salt to the potatoes and mix will to coat the potatoes with the spices.
Cover the pan till the potatoes are not tender, stirring occasionally.
Once the potatoes are almost cooked add the posto mix.
Add a little water if needed to adjust the consistency of the gravy.
Cook the potatoes in the posto paste for few more minutes until the potatoes are fully cooked and flavors are well combined.
Teste and adjust seasoning, adding sugar if required.
Served hot with steamed rice or roti.
